Sugar-Free Cinnamon Scrolls (Kid-Approved!)
Cinnamon buns are having a moment right now — from TikTok trends to long queues at Cinnabon stores, everyone’s craving that soft, swirly, cinnamon-sugary goodness. But if you’re after something a little more wholesome (and less sugar-loaded), these sugar-free cinnamon scrolls are the perfect homemade version (did someone say #fakeawaycinnabon?!).
They’re made with everyday ingredients, naturally sweetened with monk fruit, and come together in under 30 minutes; no yeast, no rising time, no fuss. Whether you’re baking ahead for the lunchbox or whipping up a treat for afternoon tea, this recipe brings the same delicious cinnamon bun flavour without the sugar crash.

Let’s get rolling.
Ingredients
For the dough:

250g self-raising flour

Pinch of salt
-
90g butter, at room temperature
-
160ml milk
For the filling:
-
120g butter, at room temperature
-
4 tbsp brown monk fruit sweetener (or less to taste) - substitute for brown sugar (or half/half of each)

2 tsp ground cinnamon
To finish (optional):

Extra monk fruit sweetener or granulated sweetener of choice for a golden crunch
Method

Preheat your oven to 210°C (fan-forced).

Make the dough: Sift flour and salt into a large bowl. Add butter and rub it in with your fingertips until the mix looks like breadcrumbs. Make a well in the centre, pour in the milk, and mix with your hands until a soft dough forms. Add a splash more milk if needed.

Knead & roll: Turn the dough out onto a lightly floured bench and knead until smooth. Roll it into a rectangle around 5mm thick.

Mix the filling: Beat softened butter, monk fruit sweetener, and cinnamon together until light and fluffy. Spread it evenly across your dough.

Roll & slice: Roll up the dough from the long side to form a log, then slice into scrolls about 3cm thick.

6. Bake: Place scrolls on a lined tray and sprinkle with a little extra sweetener if you like. Bake for 12-15 minutes or until golden and cooked through.
Optional Shortcut
Don’t have time for traditional dough? You can absolutely make these using my 2-ingredient dough; just Greek yoghurt and self-raising flour! It’s a game-changer.
Storage Tip
These scrolls will keep for up to 3 days in an airtight container, or pop them in the freezer for easy grab-and-go lunchbox fillers.
