Say hello to your new go-to savoury muffin recipe! These Ham & Tomato Relish Muffins are packed with flavour, made with simple ingredients, and perfect for lunchboxes, after-school snacks, or even a quick breakfast on the go.

They’re soft, cheesy, and have just the right amount of tang from the relish — and bonus: they freeze really well too!

Whether you’ve got leftover ham to use up or you're just after something sandwich-free for the lunchbox, these are guaranteed to be a hit with the kids (and let’s be honest… the grown-ups too).

📝 Ingredients:

  • 1 ¾ cups self-raising flour

  • ½ tsp baking soda

  • ½ tsp salt

  • 1 cup grated cheese (cheddar works best, but tasty cheese is ok too)

  • 1 cup cooked ham, diced

  • ¼ cup tomato relish

  • 1/3 cup milk

  • 1 large egg

  • 1/4 cup melted butter or olive oil

 

👩🍳 Method:

  1. Preheat your oven to 180°C (350°F) and grease or line a muffin tin.

  2. In a large bowl, mix the dry ingredients – flour, baking soda, salt – then stir in the cheese.

  3. In a separate bowl, whisk together the milk, egg, and melted butter or oil.

  4. Combine the wet and dry ingredients gently — don’t overmix.

  5. Fold through the diced ham and tomato relish.

  6. Scoop the batter into your muffin tin, filling each cup about ⅔ full.

  7. Bake for 18–20 minutes or until golden and a skewer comes out clean.

  8. Let cool slightly before serving (or packing into lunchboxes).

These muffins are freezer-friendly! Pop them into a container once cooled and freeze — then just grab and go in the morning. They’ll be defrosted and ready by lunchtime.
