An easy, freezer-friendly, sandwich-free lunchbox recipe for busy families

Looking for healthy lunchbox ideas for kids that aren’t just another sandwich? These Spinach, Feta & Salami Pastry Rolls are one of our favourite easy lunchbox fillers—and they're always a hit in my house.

Perfect for prepping ahead, these sandwich-free lunchbox snacks are golden, flaky, packed with flavour, and super satisfying. The filling is made with creamy feta, chopped salami, and cooked spinach—giving it a good boost of protein and hidden veggies. I love that they’re made in under 30 minutes and can be frozen, making them a go-to for those mornings when you’re short on time but still want to pack something homemade and wholesome.

This is a great alternative to the usual sandwich rotation and perfect for school lunchboxes, daycare, or even after-school snacks.

My kids love them, and I love that they come home with empty lunchboxes.


How to Make Spinach, Feta & Salami Pastry Rolls

Ingredients:

  • 250 grams feta cheese

  • 1–2 cups cooked spinach (if using frozen spinach, cook & drain excess fluid before adding into the mixture)

  • 1/2 cup chopped salami

  • 2 sheets puff pastry

  • 1 egg, for brushing

  • Sesame seeds, for sprinkling (optional)


Method:

  1. Preheat your oven to 180°C (fan forced).

  2. Mix the feta, spinach and salami in a bowl until well combined.

  3. Cut each puff pastry sheet into 6 rectangles.

  4. Spoon the filling across the centre of each piece and roll into a log shape, seal the edges.

  5. Place down on a lined baking tray, brush with egg wash, and sprinkle with sesame seeds (optional).

  6. Bake for 20 minutes or until golden and puffed.

  7. Let cool completely before packing into lunchboxes or storing in an airtight container (fridge or freezer).


These rolls are freezer-friendly lunchbox snacks, great hot or cold, and perfect for busy mornings. They also make a fun twist for party platters or a simple lunch at home.
